Cherries and coconut the perfect breakfast, snack or dessert? Easy to make with only a few ingredients and takes a 2 minutes. The Cherry and coconut flavour work so well together - you don’t need fresh cherries, I use frozen cherries that you can buy in a bag from Waitrose and Sainsbury’s, they are delicious!
The Chia seeds. perfect for veggies or vegans to get a good dose of omega 3 oils if you don’t get much oily fish in your diet. They also pack a great protein and fibre punch too.
All you need:
2 tbsp Chia seeds
1 tbsp coconut flakes
5 cherries - I buy the ones frozen from Sainsbury’s or Waitrose (they are the most delicious
snack) - especially with nut butter!
100ml plant based milk (I use oat milk or almond)
1 tsp honey or other sweetener
1 tsp vanilla paste (optional)
Mix it all together and soak over night or for a few hours, I topped it with a strawberry and some more coconut flakes.
I did this as a desert portion - for breakfast you may want to double it or add some oats and a little more milk.
