Raspberry and Passion Fruit Chia Pudding

November 13, 2018

Can you think of a better way to start your day?

I’m one for easy breakfasts that I can either run out the door with or have ready to eat in no time. Chia Pudding is one of the most versatile easy breakfasts to make with so many different ingredients you can flavour it with.

Chia seeds are rich in omega -3 and fibre and pack a good punch of protein too as well as being a fantastic source of antioxidants, vitamins and minerals such as calcium, magnesium and potassium.

The recipe for this chia pudding is:

2.5 tbsp Chia seeds

3 tbsp frozen raspberries broken up (you can use fresh but I love the way the frozen ones mix in well).

200ml almond milk

2 tsp honey

1 tsp vanilla extract

Granola and extra raspberries and 1 passion fruit for the topping.

Mix the chia seeds, raspberries, honey, vanilla extract and almond milk together in a glass or bowl.

Cover and refrigerate over night or for at least 3 hours.

In the morning throw on a handful of your favourite granola, a passion fruit and some extra raspberries.

Hope you enjoy this one, you can use the base of this Chia pudding (Chia seeds, honey and almond milk) to add any toppings or fruit, play around with it and find your favourite!
