Veggie Tofu Satay Butternut Noodles

This one is a must try for any of you that love satay. It can be made vegan/ veggie or with chicken, totally devisable. It's tangy, it's nutty and it's fresh and quick! 


All you need: 

(Serves 2)


1 packet of butternut squash noodles- you can make them yourself too. 

1 packet of courgette noodles - you can also make this (use 1 courgette).

1/2 onion sliced 

1/3 red pepper sliced.

1 packet of tofu

A small handful of coriander chopped 


For the sauce:

3 tbsp peanut butter

1 tsp sesame oil

A dash of chilli (flakes or powder) use according to the spice 

1/2 lime juiced

1 tsp maple syrup 

1 tsp soy sauce 

1 garlic clove crushed

1 inch of ginger grated


To do:


1. Heat the oven to 180c and Bake the tofu for 20 minutes turning a few times until slightly crispy. 


2. To make the sauce: Grate the garlic and ginger and mix all the ingredients together and set aside. 


3. Fry the veggies adding the tofu when it is ready then add the sauce when the veggies have started to soften, fry for 1 minute more and serve!
