I’m not banning bread, I’m not saying its bad, I just don’t like to have it all the time but I do love a cheese toastie so these made a lovely low carb cauliflower cheese toastie alternatives! They are delicious and super easy.
All you need:
(1 large serving)
1/2 large cauliflower, chopped and blitzed.
30g cheese (i used cheddar)
1/4 onion very finely sliced chopped
1 tbsp medium jalapeños chopped
Salt and pepper to season
Heat oven to 180°C.
Mix blitzed cauliflower, eggs, onion, seasoning and jalapeños together in a bowl and then make into patties/ circles on a baking tray- make 4.
Bake for 15 minutes then put the cheese on top of 2 and put the other 2 pieces on top – bake or grill for another 5- 10 minutes.
I served them with a salad and it was delicious, cheese toastie heaven and nicely lower in carbs than bread.
